→ Grilled Cheese
08 - 4 slices country-style or sourdough bread
09 - 4 slices sharp cheddar cheese
10 - 2 tablespoons unsalted butter, softened
# Directions:
01 - Combine tomatoes, sugar, apple cider vinegar, salt, black pepper, and optional spices in a small saucepan. Stir to integrate.
02 - Bring mixture to a gentle simmer over medium heat, stirring occasionally. Reduce heat and continue cooking for 18 to 20 minutes, stirring occasionally, until thickened and jam-like. Remove from heat and allow to cool slightly.
03 - Spread softened butter evenly over one side of each bread slice.
04 - Place two bread slices, buttered side down, onto a skillet or griddle preheated over medium-low heat. Arrange cheese slices on top, followed by 1 to 2 tablespoons of tomato jam per sandwich.
05 - Cover with remaining bread slices, buttered side up. Grill for 3 to 4 minutes per side, pressing lightly until golden brown and the cheese is thoroughly melted.
06 - Transfer sandwiches to a cutting board, let cool slightly, slice in half, and serve warm.
